  • 1 teaspoon garlic powder for depth of flavor

  • 0.5 teaspoon black pepper freshly ground

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a wire rack.
  2. Combine paprika, garlic powder, cayenne, salt, and black pepper in a bowl. Whisk to blend.
  3. Add olive oil to the spice mix and stir to create a paste.
  4. Pat the chicken drumsticks dry with paper towels.
  5. Rub the spice mixture all over each drumstick, coating evenly.
  6. Arrange drumsticks on the baking sheet, spaced apart.
  7. Bake for about 40 minutes, flipping halfway through, until golden and crisp.
  8. Check for crispness and ensure internal temperature reaches 165°F (74°C).
  9. Remove from the oven and let the drumsticks rest for a few minutes.
  10. Serve the chicken drumsticks hot, with crisp skin.

Notes

For extra crispy skin, ensure the chicken is very dry before applying the spice mixture and avoid overcrowding the baking sheet.
