Ingredients
  

Pasta
  • 250 g Pasta penne, rotini, or fusilli
Vegetables
  • 300 g Broccoli Florets fresh or frozen
  • 400 g Chickpeas drained & rinsed
Flavorings
  • 4 cloves Garlic minced
  • 60 ml Olive Oil
  • 0.25 teaspoon Red Pepper Flakes
  • 60 ml Vegetable Broth
  • 1 tablespoon Lemon Juice
  • 30 g Grated Parmesan Cheese optional
  • to taste Salt & Black Pepper

Method
 

  1. Cook pasta al dente, reserving ½ cup pasta water.
  2. Heat olive oil, sauté garlic and red pepper flakes for 1 minute.
  3. Add broccoli, cook 5-7 minutes until tender-crisp.
  4. Add chickpeas, broth, and lemon juice. Simmer 2-3 minutes.
  5. Mix pasta into the pan, add pasta water if needed.
  6. Season with salt and pepper, add parmesan if using. Serve warm.

Notes

Adjust the amount of red pepper flakes to your spice preference.
