  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 10.5 oz cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • chopped parsley for garnish Optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Brown beef and onion in a skillet. Drain excess fat.
  3. Stir in garlic and cook for 30 seconds.
  4. Whisk together soup, milk/broth, paprika, salt, and pepper.
  5. Combine rice, beef, half the cheese, and sauce in the baking dish.
  6. Sprinkle remaining cheese on top. Cover and bake for 20 minutes.
  7. Remove foil and bake 10 minutes until cheese is bubbly.
  8. Broil for 2 minutes for a crispy cheese topping (optional).
  9. Garnish with parsley and serve hot.

Notes

For a spicier kick, add a pinch of red pepper flakes to the beef mixture.
