  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup tomato sauce
  • 1.5 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • Butter or oil for frying

Method
 

  1. Brown ground beef in olive oil; drain fat. Add onion, cook until softened. Stir in garlic, chili powder, cumin, paprika, salt, pepper, and tomato sauce; simmer 3–4 minutes.
  2. Layer cheese and beef mixture on half of each tortilla, then fold.
  3. Cook each quesadilla in butter/oil until golden brown (2–3 minutes per side).
  4. Slice and serve warm.

Serve with your favorite toppings like sour cream, salsa, or guacamole.
