- Brown ground beef in olive oil; drain fat. Add onion, cook until softened. Stir in garlic, chili powder, cumin, paprika, salt, pepper, and tomato sauce; simmer 3–4 minutes.
- Layer cheese and beef mixture on half of each tortilla, then fold.
- Cook each quesadilla in butter/oil until golden brown (2–3 minutes per side).
- Slice and serve warm.
