  • 1 pound ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup tomato sauce
  • 1.5 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • Butter or oil for frying

Method
 

  1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned; drain excess fat.
  2. Stir in chopped onion and cook until softened. Add garlic and seasonings, mixing well with tomato sauce; simmer for 3-4 minutes.
  3. Lay out tortillas, sprinkle cheese on one half, add beef mixture, top with more cheese, and fold.
  4. Cook each quesadilla in a skillet over medium heat with butter or oil for 2-3 minutes per side until golden brown.
  5. Slice into wedges and serve warm with your choice of sour cream, salsa, or guacamole.

Notes

For extra flavor, add a pinch of cayenne pepper to the beef mixture.
