Ingredients
  

Pasta
  • 1 pound pasta penne, rotini, or your favorite
Sauce
  • 1 tablespoon olive oil
  • 1 pound chicken beef sausage sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic minced
  • 1/2 teaspoon dried Italian herbs
  • 1/4 teaspoon red pepper flakes optional
  • 14.5 ounce diced tomatoes undrained
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • to taste Salt and pepper
  • Fresh parsley chopped (for garnish)

Method
 

  1. Cook pasta according to package directions. Reserve pasta water.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add sausage and cook until browned, about 5-7 minutes.
  4. Add onion and cook until softened, about 3-5 minutes.
  5. Add garlic, Italian herbs, and red pepper flakes (if using) and cook for 1 minute more.
  6. Stir in diced tomatoes and bring to a simmer. Cook for 5 minutes.
  7. Stir in heavy cream and Parmesan cheese. Season with salt and pepper. Simmer until thickened.
  8. Add the cooked pasta to the skillet with the sauce. Toss to coat.
  9. If the sauce is too thick, add pasta water until desired consistency.
  10. Serve immediately, garnished with fresh parsley.

Notes

Adjust the amount of red pepper flakes to your spice preference.
