Method
- Cook pasta according to package directions. Reserve pasta water.
- Heat olive oil in a large skillet over medium heat.
- Add sausage and cook until browned, about 5-7 minutes.
- Add onion and cook until softened, about 3-5 minutes.
- Add garlic, Italian herbs, and red pepper flakes (if using) and cook for 1 minute more.
- Stir in diced tomatoes and bring to a simmer. Cook for 5 minutes.
- Stir in heavy cream and Parmesan cheese. Season with salt and pepper. Simmer until thickened.
- Add the cooked pasta to the skillet with the sauce. Toss to coat.
- If the sauce is too thick, add pasta water until desired consistency.
- Serve immediately, garnished with fresh parsley.
Notes
Adjust the amount of red pepper flakes to your spice preference.
