  • 2 tablespoons olive oil
  • 4 cups fresh spinach About 120 g.
  • 4 ounces feta cheese, crumbled About 115 g.
  • 2 cloves garlic, minced
  • Salt To taste.
  • Black pepper To taste.
  • 1 teaspoon red pepper flakes Optional, for heat.

Method
 

  1. Boil gnocchi until they float, then drain.
  2. Heat olive oil, add gnocchi, and cook until golden brown on one side (2-3 minutes).
  3. Stir and cook gnocchi until crispy on all sides (2-3 minutes).
  4. Reduce heat, add garlic, and sauté until fragrant (about 1 minute).
  5. Add spinach and stir until wilted (2-3 minutes).
  6. Season with salt, pepper, and red pepper flakes (if using). Remove from heat.
  7. Stir in feta cheese and serve immediately.

Notes

For extra flavor, add a squeeze of lemon juice before serving.
