Ingredients
  

Chicken
  • 1 lb boneless, skinless chicken breasts
Seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
Vegetables
  • 1 bell pepper, sliced (any color)
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
Other
  • 14.5 oz canned diced tomatoes, with juices
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 8 oz penne pasta (or pasta of choice)
  • Fresh parsley, chopped for garnish

Method
 

  1. Season chicken with olive oil, Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Lightly brown chicken in a skillet, 2-3 minutes per side.
  3. Place chicken in the bottom of the slow cooker.
  4. Add bell pepper, onion, and garlic on top of the chicken.
  5. Pour in diced tomatoes with juices and chicken broth.
  6. Cook on low for 4-5 hours or on high for 2-3 hours.
  7. Remove and shred chicken, then return to the crock pot.
  8. Stir in heavy cream and Parmesan cheese until melted.
  9. Cook pasta, drain, and add to the crock pot.
  10. Heat together for 15-20 minutes on low.
  11. Serve hot, garnished with parsley.

Notes

Adjust Cajun seasoning to your preferred spice level.
