  • 1.5 pounds chicken tenders
  • 1 cup plain Greek yogurt or mayonnaise
  • 1 packet ranch seasoning mix (1 ounce)
  • 1 cup shredded cheddar cheese
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup crushed Ritz crackers
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon paprika
  • 0.25 teaspoon black pepper
  • Cooking spray or olive oil for brushing/spraying

Method
 

  1. Preheat oven to 400°F (200°C). Prepare baking sheet with parchment paper and a wire rack.
  2. Mix Greek yogurt and ranch seasoning until smooth.
  3. Combine cheddar, Parmesan, crushed Ritz, garlic powder, paprika, and black pepper in another bowl.
  4. Coat chicken in yogurt mixture, then press into cheese-cracker mixture.
  5. Place on rack or baking sheet and spray with cooking spray or brush with olive oil.
  6. Bake for 15–20 minutes until golden and cooked through. Rest for 2–3 minutes before serving.

Notes

For extra crispy tenders, broil for the last 1-2 minutes, watching carefully to prevent burning.
