  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 pound pasta such as spaghetti, fettuccine, or penne
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 0.5 cup chicken broth
  • 0.25 cup heavy cream or half-and-half optional
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup chopped fresh parsley
  • to taste Salt and pepper
  • Optional Red pepper flakes for heat

Method
 

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chicken and cook until browned and cooked through (5-7 minutes). Season with salt and pepper.
  4. Add garlic and cook until fragrant (about 30 seconds).
  5. Pour in chicken broth and simmer, scraping up browned bits.
  6. If using, stir in heavy cream. Reduce heat and simmer for a minute.
  7. Stir in pasta and Parmesan cheese. Toss to coat.
  8. Stir in parsley.
  9. Season with salt and pepper to taste. Add red pepper flakes if desired.
  10. Serve immediately and enjoy!

Notes

For a richer flavor, use freshly grated Parmesan cheese.
