Ingredients
  

Chicken and Vegetables
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
Garlic Butter Sauce
  • 6 cloves garlic, minced
  • 0.5 cup unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish) optional, for garnish
  • 0.5 cup chicken broth

Method
 

  1. Toss chicken, potatoes, and carrots into the slow cooker.
  2. In a bowl, combine melted butter, garlic, Italian seasoning, salt, pepper, and chicken broth.
  3. Pour the garlic butter mixture over everything in the slow cooker. Stir gently to coat all pieces.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Garnish with fresh parsley if desired. Plate and serve.

Notes

For extra flavor, brown the chicken in a skillet before adding it to the slow cooker.
