  • 8 chicken drumsticks
  • 4 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon red pepper flakes, optional
  • 0.5 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 Zest of 1 lemon

Method
 

  1. Preheat oven to 425°F. Line baking sheet.
  2. Combine olive oil, garlic, salt, pepper, paprika, and red pepper flakes in a bowl.
  3. Add drumsticks and toss to coat. Marinate for 30 minutes (or up to 4 hours).
  4. Remove drumsticks, shake off excess marinade, and dredge in Parmesan cheese.
  5. Place drumsticks on the baking sheet.
  6. Bake for 30-35 minutes, or until golden brown and internal temperature reaches 165°F. Broil for 2-3 minutes for crispier skin.
  7. Garnish with parsley and lemon zest. Serve warm.

Notes

For extra crispy skin, pat the drumsticks dry with paper towels before dredging in Parmesan cheese.
