Method
- Pat beef dry and season with salt and pepper.
- Optional: Sear beef in olive oil until browned.
- Place potatoes in the slow cooker, add beef, onion, and carrots.
- Melt butter, stir in garlic, herbs, red pepper flakes, and parsley.
- Pour beef broth over beef and potatoes. Drizzle garlic butter sauce over everything.
- Cook on LOW for 7-8 hours or HIGH for 4-5 hours.
- Adjust seasoning. Thicken sauce if needed.
- Transfer to a platter, spoon sauce over, garnish with parsley, and serve.
Notes
For extra flavor, sear the beef before adding it to the slow cooker.
